When in town, add to your New Braunfels Getaway by employing Carlos Gomez as your personal chef! Carlos is a fabulous and talented man! Athletic golfer and consummate chef, Carlos is a creative force. He can design the perfect meal, provide the ultimate wine or drink combination to compliment each dish. We have been blessed to sample his incredible fish tacos, roasted chicken and tomato salad with a chilled glass of Sangria. The father of two boys and married to our dear friend Michelle who does fabulous facials!

Carlos can come to your vacation home and prepare the perfect feast after a long day of site seeing or a long float.

Carlos’ Menu

Fresh Salads

Red Onion Tomatoes and Herb Salad
(Fresh tomato slices, red onion and fresh herbs sprinkled with a red wine vinaigrette)

Caprese Salad
(Fresh tomatoes, Mozzarella layered with basil and topped off with choice of light olive oil or aged balsamic vinegar)

Mexican Tomato Salad
(Coarsely chopped tomatoes, sliced onions, and kidney beans tossed with a green Chile dressing)

Vegetable Melody
(Cucumber, scallions, tomatoes, yellow bell pepper, celery, radishes, arugula, and mint garnish topped with a creamy garlic dressing)

Entrees’

Tasty Spanish Roasted Chickens
(Whole chicken, seasoned and stuffed with parsley stalks and whole lemons. Laid on a bed of golden brown mixture of potatoes and andouillie sausage. Served with gremolata)

Beef Marengo
(Tender beef slowly stewed in tomatoes, tomato juice, white wine, basil, thyme, orange zest and mushrooms. Served over egg noodles)

Fish Tacos!
(Pan fried tilapia fillets served with green and red cabbage, red onions, pico de gallo, and mango salsa all in a warm corn or flower tortilla)

Chicken Tacos
(Baked seasoned chicken shredded and served with tomatoes, avocado, scallions, and pico de gallo all served in a corn tortilla)

Meat Bolognese with Rigatoni
(An Italian favorite consisting of Ground chuck beef slowly cooked with carrots, garlic, celery, crushed tomatoes, basil, parsley, onion, and grated pecorino romano cheese, simmered and served over rigatoni pasta)

Chef Carlos can also prepare any menu that you may request including Holiday meals such as Thanksgiving and more!

Chef Carlos charges $20 an hour to prepare the meal plus the cost of the ingredients. He is also is a very talented bartender. Additional servers are $10 an hour.
